Bacon-Stuffed Tenderloin Steaks Stuffing: 8 slices bacon, cut into pieces ¼ cup chopped onion ½ cup stuffing mix ½ cup water Cook bacon until almost crisp. Drain, reserving 1 Tablespoon drippings and set aside. Add onion to skillet and sauté. Add stuffing and water, mix well. Remove from heat. 4 (6 ounce) boneless beef tenderloin steaks, 1½-inch thick Salt and pepper to taste With sharp knife, make pocket in steak. Spoon stuffing into each steak. Brush with reserved dripping. Sprinkle with salt and pepper to taste. Grill over medium heat until desired doneness, turning once.
