Beef Short Ribs 3-5 pounds lean beef short ribs 4 potatoes, peeled and quartered 4 carrots, peeled and cut into pieces 1 onion, sliced 2 tablespoons vinegar 2 teaspoons sugar 1 tablespoon horseradish 1 tablespoon prepared Mustard 2 tablespoons ketchup 1 cup beef broth salt and pepper to taste ¼ cup flour Brown ribs in oven - drain. Place vegetables in slow cooker then add place beef ribs over vegetables. Combine remaining ingredients, except flour in small mixing bowl. Pour over meat and vegetables. Cover and cook on low 6 to 8 hours or overnight. Mix flour with a small amount of water and cook until thickened. Stir into sauce in slow cooker. Cook on high 10 to 15 minutes until sauce has thickened somewhat. Serves 4-6.
