Beef and Cheese Roll-ups 1 (8 ounce) tub cream cheese with garden vegetables 4 10-inch tortillas 1 cup shredded carrots 1 cup shredded Monterey Jack cheese 1 pound thinly sliced, fully cooked beef 8 leaved leaf lettuce Spread cream cheese evenly onto tortillas. Sprinkle evenly with carrots and cheese. Top with beef and lettuce. Roll up tortillas. Wrap individually in plastic wrap. Chill, seam side down, for 30 minutes or up to 4 hours. Cut roll-ups in half and serve as a sandwich or cut into 1-inch thick slices and serve as an appetizer. Makes 8 main-dish or 32 appetizer servings.
