Black Bean Soup 1-½ pounds lean ground beef 1 medium onion, chopped ¼ teaspoon minced garlic 1 (16 ounce) can black beans, drained 1 (16 ounce) can chopped peeled tomatoes 1 (14 ounce) can beef broth 1 cup salsa 1 cup water 2 to 3 tablespoons chopped jalapeno chilies 1 to 2 tablespoons chili powder 1 to 2 tablespoons dried cilantro Brown ground beef with onion and garlic in large skillet, stirring until crumble; drain. Combine beans, tomatoes, broth, salsa and water in large saucepan. Add ground beef mixture; stir until mixed. Add chilies, chili powder and cilantro; stir until mixed. Simmer over low hear for 1 hour. May be cooked in slow cooker on Low for several hours. Serve with grated cheese, sour cream, additional salsa and corn bread.
