Cheeseburger Casserole ½ cup milk 2 tablespoons butter or margarine ½ teaspoon salt 1-1/3 cups instant mashed potato flakes 1-½ pounds ground beef 1 can (14.5 oz.) diced tomatoes with juice, preferably garlic and onion flavored 3 tablespoons tomato paste ½ teaspoon garlic powder ¼ cup shredded Cheddar cheese Preheat broiler; butter 6-cup baking dish. In microwave-safe bowl combine milk, butter, salt and 1-1/3 cups water; microwave on High until butter is melted, about 3 minutes. Stir in potato flakes until blended, Heat large nonstick skillet over medium-high heat; add ground beef. Cook, stirring until browned, about 5 minutes; drain fat. Stir in tomatoes, tomato paste and garlic powder. Cook, stirring occasionally, until beef is cooked through, about 10 minutes. Transfer mixture to baking dish. If desired, transfer reserved potatoes in pastry bag fitted with star tip; pipe or spoon around edge of dish. Sprinkle cheese over beef mixture. Broil until potatoes are lightly browned and cheese is melted, 2 minutes. Makes 6 servings.
