Grilled Vegetable Packets In a large bowl combine: 2 ears sweet corn with husks removed, and cut into 4 pieces 4 small "new" red potatoes cut in half 2 carrots cut into 1-inch chunks 1 medium zucchini cut into 1-inch chunks 1 medium onion cut into wedges In small bowl combine then pour over vegetables and toss to coat: ¼ cup melted butter 2 tablespoons Dijon mustard ¼ teaspoon dried thyme leaves ¼ teaspoon salt ½ teaspoon pepper Cut four 18"x12" pieces of heavy-duty foil. Place vegetables in center of foil and wrap securely allowing for expansion. When ready to grill, place on heat and cook 25 to 35 minutes or until tender.
