Hoosier Crumb Cake ½ cup margarine or butter 2 cups brown sugar 2 cups flour 1 egg, beaten 1 cup buttermilk 1 teaspoon vanilla 1 teaspoon baking soda 1 teaspoon salt Whipped cream or Cool Whip Spring of mint Preheat oven to 375°. Cream margarine with brown sugar. Add flour and mix well until blended and set aside ½ cup for topping. To the remaining mixture, add egg, buttermilk, vanilla, baking soda and salt. Stir until just blended. Pout into greased 13x9x2-inch baking pan. Sprinkle the reserved flour mixture on top and bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Garnish with whipped cream and mint.
