Lemon Pie Squares Base: 1 package lemon cake mix ¼ cup margarine 3 egg yolks - reserve whites for meringue 1 cup coconut Combine all above ingredients in mixing bowl until dough sticks together. Press into 13x9-inch baking pan. Bake in 250º oven for 10 minutes. Pie filling: 1 ½ cups sugar 3 tablespoons cornstarch 3 tablespoons flour 1 ½ cup water 3 eggs yolks - reserve white for meringue Combine all pie filling ingredients in large mixing bowl and cook in microwave 3 minutes on high - stir and cook 2 minutes longer, stir, continue cooking one minute at a time and stirring until thickened. Add: 6 tablespoons lemon juice 3 tablespoons butter Pour pie filling over base. Meringue 6 remaining egg whites Topping: 12 tablespoons sugar ½ teaspoon lemon extract Top with meringue. Return to oven and bake additional 15-25 minutes or until meringue in lightly browned. Cool completely and cut into squares. Makes 12 servings.
