Grandma Wascher's Rhubarb Coffee Cake ½ cup shortening 1 ½ cup brown sugar 1 cup buttermilk 2 cups chopped rhubarb 1 egg 1 teaspoon vanilla 2 cups flour 1 teaspoon baking powder 1/8 teaspoon salt Mix all ingredients together in a mixing bowl, beating well. Pour into greased and floured 9x13-inch baking pan. Topping: ½ cup sugar 1 teaspoon cinnamon Mix well in small bowl. Sprinkle batter with cinnamon/sugar topping. Bake at 350º for 45 minutes or until tooth pick inserted in center comes out clean.
